You can add the extension of the file type to its File Name, by open your part and assembly templates and adding the below to their custom properties:

Repeat the same for part template.

Next is to go drawing template, edit the Sheet Format, Link to the new custom property.

Make sure to save your templates with the new changes. For existing files, repeating the above steps should bring the file extensions next to the File Names.
